We recently had a birthday party at Next Level Farm for our amazing farm owner Michele Mayer. The party was organized by our barn family headed up by Sergio and the farm staff. The festive outdoor setting was perfect for the authentic empanadas and the silky, luscious cake made by a friend.
I knew that everyone would probably fill up on cake so I thought I would make some take home sugar cookies using my new stately wooden horse cookie mold. Of course, like all of you, I was in a bit of a time crunch. So, I picked up a roll of sugar cookie dough from Publix on the way home the day before the party.
Within 20 minutes of opening the package, I was pulling cookies out of the oven! Everything wasn't sunshine and roses though. Here's what I learned.
1. If you want beautiful shapes, you will need to add some flour to the dough and roll it out to the thickness that works for your mold. If you don't have a rolling pin, flour the outside of a wine bottle and have at it.
2. I pressed my mold into the dough and it left a beautiful impression. However, the cookies puffed up while cooking and the design was lost. You have two choices here. Either roll out the dough thinner or do as I did. Cut out the round cookie shapes and bake them. When you remove the baked cookies from the oven, press the cookie mold into the dough making the design BEFORE they cool.
3. I used my air fryer oven. Be careful to use the correct rack and adjust your cooking time as needed. The cookies cooked super fast. I can't recommend the Breville Air Fryer from William Sonoma more highly!
4. This brand of cookie dough is edible raw!
These cookies can be made more amazing by dipping half of the cookie in melted white, dark or milk chocolate. Then, dip in crushed peppermint candies, nonpareils or mini M&Ms.
HEAT oven to 350ºF (or 325ºF for nonstick cookie sheet). CUT dough into 1/2-inch slices.
PLACE 2 inches apart on ungreased cookie sheet.
BAKE 11 to 14 minutes or until edges are light golden brown.
COOL 2 minutes; remove from cookie sheet.
CUTOUT COOKIES: Knead 1/4 cup all-purpose flour into dough. Roll on floured surface until 1/4 inch thick. Cut with 2 1/2-inch cutter. Bake 8 to 11 minutes.
HS Tip:
Air Fryers may cook more quickly.
Decorate with royal icing or edible icing pens when COMPLETELY cooled.
